There are a variety of different pineapple species in the world- such as Sugarloaf, Red Spanish, Queen, Smooth Cayenne, etc, just to name a few. Among them, ‘Smooth Cayenne’ variety is known to be one of the most commonly grown type.
Smooth Cayenne variety originated from Hawaii and also known as ‘Sarawak’ or ‘Kew’ in Thailand, India, Malaysia and Sri Lanka. Smooth Cayenne type was first introduced to Philippine from Hawaii in the year 191.
The usual size of a Smooth Cayenne weighs around 4-10 lbs (or 1.8- 4.5 kg). The characteristics of a Smooth Cayenne are as follow : shallow eyes, cylindrical form, yellow flash, orange rind, juiciness, low fiber, and rich mildly acidic flavor. Smooth Cayenne is prized for canning, as it has excellent flavor and sufficient fibers to make firm slices, and cubes.

Inspection Conveyors are generally installed at the beginning of the pineapple process line as it is important to sort the raw materials to reject the unripe, rotten, or diseased pineapples to ensure the quality and taste of the final products. Raw material inspection conveyors are also used to check the size of the pineapples before passing them to the slicing line at the factory. The sliced pineapples then go through another round of inspection on the juice material inspection conveyors before arriving to the extraction stages.
For the extraction stage, two stages of extractors are usually use to get the best juice yield. After the pineapples are washed and passed the inspection stages, the crushed pineapples will be put into the extraction machines via the inlet housing. The screw inside the machine will then carry the crushed fruit to pass through the screen set. The perforated screen hole diameter depends on the characteristics of the fruit’s pulp- normally, the diameter is around 0.5 to 1.5 mm. The pressure cone valve against the edge of the outlet housing determines the quantity of liquid extracted- meaning high pressure, high liquid yield, and high dryness of pomace. The pressure is normally about 3.5-4.0 Barg for low-pressure extractors’ and vertical high-pressure extractors’ press which is forced by air cylinder and pneumatical system.

Storage tanks for pineapple process line can hold up to 3,500 liters with insulation agitator C/W centrifugal pump 2.2 kw. installed. As for the concentrate blending tank, it can hold up to 6,000 liters of products with chilled water channel, insulation, and agitator rotary lobe pump included in the design.
Evaporators are used in the pineapple process line to remove water from the liquid product to obtain the concentrated version of the product. Among the different types of evaporator designs Muninmax offer, the Long Tube Falling Film Evaporator can be considered as the best quality type evaporator. The skin strucutre of the evaporator is made of hot-dipped galvanized carbon steel, and all parts in contact with the evaporator and in the heat exchanger are made of stainless steel AISI 304 and AISI 316. The residence time for falling film type of long tube evaporator is about 20-30 seconds, which is a lot shorter compared to the residence time of
3-4 minutes in a rising film type evaporator. Falling film evaporator also has more complicated system than rising film evaporator. As for the application, both falling film and rising film types are suitable for
low viscosity liquid products and non-fouling sensitive products.

The sterilizer is a machinery used in the process line to kill microbiological beings before the product is filled into various packaging so that the product can be stored and distributed at an ambient or chilled temperature. At Muninmax, different types of tubular module shell and tube design to install in sterilizers are available for different product types – liquid products, particulate products, high viscosity products and pastes. Different types of sterilizers are also available at Munimax- UHT, Pasteurizer, Retort, Cooker and Cooler, etc. As regards to the pasteurizing process, the same principle applies to all types of sterilizers- just 63-95ºC temperature and 1-30 minutes holding time.
Aseptic Bag Filler
During this stage of the process line, the sterilized containers are filled with an aseptic product by using aseptic bag filling machines in a sterile environment and then, sealed to prevent any contamination. The Muninmax Aseptic Bulk Filler machine is designed to fill fluids, low-acid and high-acid single strength, concentrated, and particulate products into respective containers under aseptic conditions. The machine is built to fill up to 20-10,000 liters or 6-300 gallons. The capacity of each machine depends on the bag sie, pressure, operator’s skill and product supply facilities as well.
There are three main operating cycles while using the Munimax Aseptic Bulk Filling machine- machine sterilization, filling, and cleaning. All three cycles work automatically.
