Pineapple Canning Processing Line

From whole pineapples to canned slices, diced pineapple and tidbits.

Integrated Pineapple Canning Line

Muninmax (MNM) designs and supplies integrated pineapple canning lines, combining equipment manufactured by MNM with machinery procured from specialist suppliers.

The production route covers whole-fruit receiving, washing, grading, flesh preparation, cutting, fruit packing, liquid filling, exhausting, can seaming, continuous cooking and cooling, and can-surface drying.

Our project scope includes line design, equipment manufacture and procurement, installation and commissioning. We coordinate the equipment and material-handling routes around the required products, can formats and production capacity.

Products & Design Basis

The line produces three pineapple forms for canning:

Products & Design Basis
ProductPreparation route
Pineapple SlicesPrepared pineapple flesh is sliced and transferred to fruit packing.
Diced PineappleSelected slices undergo further cutting to produce diced pieces.
Pineapple TidbitsSelected slices undergo further cutting to produce tidbits.

Fruit is packed into prepared cans by operators. An Inline Liquid Filler then adds the selected packing liquid: syrup or pineapple juice.

MNM develops the line configuration from the incoming fruit-size profile, required product forms, can sizes, production targets and operating schedule. Equipment capacities are coordinated across fruit preparation, packing, seaming and thermal processing.

Processing Stages

1. Receiving & Washing

Input: Whole pineapples.

Incoming fruit is received and inspected before entering the washing section. The Air Bubble Washer with Spray washes the whole pineapples before transfer to size grading.

Output: Inspected and washed fruit ready for grading.

Main equipment: Receiving and inspection conveyors, Air Bubble Washer with Spray, and transfer equipment.

2. Size Grading & Fruit Distribution

Input: Washed whole pineapples.

The grading section separates fruit by size. Stockbin Conveyors receive the graded fruit before transfer and distribution equipment feeds the Ginaca machines.

MNM coordinates the grading and distribution arrangement with the incoming fruit-size profile and required preparation capacity.

Output: Size-graded pineapples supplied to the Ginaca section.

Main equipment: Fruit grader, Stockbin Conveyors, transfer conveyors, elevators and fruit distribution equipment.

3. Ginaca Preparation

Input: Size-graded whole pineapples.

Ginaca machines prepare cylindrical pineapple flesh by removing the outer peel, ends and central core. The prepared flesh transfers to the inspection and trimming conveyors.

A Waste Screw Conveyor carries the peels away from the Ginaca section.

MNM procures the Ginaca machines from external suppliers and provides installation and integration with the surrounding equipment.

Output: Prepared pineapple flesh for inspection, trimming and cutting, with peels discharged separately.

Main equipment: Ginaca machines, flesh transfer conveyors and Waste Screw Conveyor.

4. Trimming, Cutting & Fruit Packing

Input: Pineapple flesh prepared by the Ginaca machines.

Operators inspect and trim the flesh on conveyors before slicing. The flesh is cut into slices, with selected portions directed to further cutting for diced pineapple or tidbits.

Operators pack the selected fruit form into prepared empty cans.

Flesh trimmings collected from trimming, slicing, tidbit preparation and packing are conveyed to the separate juice processing line.

Output: Cans containing pineapple slices, diced pineapple or tidbits.

Main equipment: Inspection and trimming conveyors, Slicers, Segmenters and cutting equipment for the selected product forms, packing conveyors, and a flesh-trimmings Screw Conveyor.

5. Packing Liquid Preparation & Inline Filling

Input: Fruit-filled cans and the selected packing liquid.

Syrup or pineapple juice is prepared and held in tanks before supply to the Inline Liquid Filler.

For pineapple juice packing, juice is supplied from a separate juice processing line or another juice supply system. Preparation and holding take place within the canning line before liquid filling.

The Inline Liquid Filler adds the selected liquid to the fruit-filled cans.

Output: Fruit-filled cans with syrup or pineapple juice, ready for exhausting.

Main equipment: Liquid preparation equipment, holding tanks, transfer pumps and Inline Liquid Filler.

6. Exhausting & Can Seaming

Input: Cans containing pineapple and packing liquid.

Filled cans pass through the Exhaust Box before entering the Seamer. The seaming machine is selected for the required can size.

MNM procures the seaming equipment from external suppliers and installs and integrates it into the line.

Output: Sealed cans ready for continuous cooking and cooling.

Main equipment: Exhaust Box, can transfer conveyors and the selected Seamer.

7. Continuous Cooking & Cooling

Input: Sealed pineapple cans.

The Continuous Cooker and Cooler carries the cans through the heating and cooling stages. The configuration presented here uses a water-bath arrangement.

MNM designs and manufactures the Cooker and Cooler and integrates it with the upstream seaming and downstream handling equipment. Processing conditions are defined for the product, can format and project requirements.

Output: Cans discharged after the heating and cooling stages, ready for surface drying.

Main equipment: Continuous Water-Bath Cooker and Cooler and connecting can conveyors.

8. Can Drying & Discharge

Input: Cans discharged from the Cooker and Cooler.

A continuous air-blowing system removes water from the can surfaces as the cans travel along the conveyor. The dried cans then leave the processing line through the discharge arrangement.

Output: Cans with dried exterior surfaces, discharged for subsequent handling.

Main equipment: Can conveyors, air-blowing equipment and discharge conveyors.

Package-surface drying is also used in suitable pouch-processing arrangements. See the pineapple tidbits in pillow pouches example.

Line Integration & Material Handling

MNM coordinates the equipment capacities, conveyor transfers and machine interfaces across the canning line.

The engineering scope connects fruit grading and Ginaca preparation with cutting, manual fruit packing, liquid filling, seaming, continuous cooking and cooling, and discharge handling.

Two separate material routes connect fruit preparation with the surrounding plant:

  • Peel discharge: The Waste Screw Conveyor removes peels from the Ginaca section.
  • Flesh trimmings: A separate Screw Conveyor transfers flesh trimmings from preparation and packing to the juice processing line.

The canning line also receives pineapple juice from a separate processing or supply system when juice is selected as the packing liquid. MNM defines the transfer connections and interface responsibilities within the project scope.

Configuration & Scope

Can Seaming Configurations

Configuration & Scope
Can sizeSeaming configuration
A2Rebuilt Canco 400, with four seaming heads, procured from an external rebuild specialist.
A2-1/2Single-head Seamer procured from an external supplier.
A10Single-head Seamer procured from an external supplier.

MNM provides installation and line integration for these machines. Can dimensions and specifications form part of the equipment selection.

Product & Packing Liquid Selection

The preparation route supports slices, with selected slices directed to further cutting for diced pineapple or tidbits. The liquid-filling arrangement is configured for syrup or pineapple juice according to the required product.

Line Boundary

The scope described on this page starts with whole-pineapple receiving and finishes after can-surface drying and discharge.

Empty cans enter the line ready for fruit filling. Empty-can cleaning, labelling and carton packing are outside this described scope. Juice extraction takes place in the separate juice processing line.
